Skyr Fruit Tart

Ingredients:
For the crust:
- 
140 g almond flour
- 
50 g coconut oil
- 
85g honey
- 
0.5 tsp salt
For the filling:
- 
2 cups of plain Skyr
- 
1/4 cup of honey
- 
1 tsp vanilla extract
- 
2.5 dl fresh fruit (such as berries, kiwi, and mango)
Instructions:
- 
Preheat the oven to 175°C.
- 
In a large mixing bowl, combine the almond flour, coconut oil, honey, and salt. Mix until a dough forms.
- 
Press the dough into a 23 cm tart pan. Use a fork to poke holes in the crust.
- 
Bake the crust for 12-15 minutes, or until it's lightly golden brown. Allow it to cool completely.
- 
In another mixing bowl, combine the Skyr, honey, and vanilla extract. Mix well.
- 
Pour the Skyr mixture into the cooled crust and smooth it out with a spatula.
- 
Arrange the fresh fruit on top of the Skyr mixture in any pattern you like.
- 
Refrigerate the tart for at least 1 hour before serving.
