Skyr Fruit Tart

For the crust:
  • 140 g almond flour
  • 50 g coconut oil
  • 85g honey
  • 0.5 tsp salt
For the filling:
  • 2 cups of plain Skyr 
  • 1/4 cup of honey
  • 1 tsp vanilla extract
  • 2.5 dl fresh fruit (such as berries, kiwi, and mango)
  1. Preheat the oven to 175°C.
  2. In a large mixing bowl, combine the almond flour, coconut oil, honey, and salt. Mix until a dough forms.
  3. Press the dough into a 23 cm tart pan. Use a fork to poke holes in the crust.
  4. Bake the crust for 12-15 minutes, or until it's lightly golden brown. Allow it to cool completely.
  5. In another mixing bowl, combine the Skyr, honey, and vanilla extract. Mix well.
  6. Pour the Skyr mixture into the cooled crust and smooth it out with a spatula.
  7. Arrange the fresh fruit on top of the Skyr mixture in any pattern you like.
  8. Refrigerate the tart for at least 1 hour before serving.
