Skyr Cookies
Ingredients:

250g all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

150g unsalted butter, room temperature

120g granulated sugar

1 egg
-
1 teaspoon vanilla extract

100g Skyr or Greek yogurt
Instructions:

Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.

In a medium bowl, mix together the flour, baking powder, baking soda, and salt.

In a separate large mixing bowl, beat the butter and sugar until creamy. Beat in the egg and vanilla extract.

Slowly add the flour mixture to the butter mixture and mix until just combined. Add the Skyr or Greek yogurt and mix until well combined.

Use a cookie scoop or spoon to form balls of dough, ca. 3cm in diameter, flatten then slightly and place them on the prepared baking sheet.

Bake for 12-15 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Note: You can also add chopped nuts, chocolate chips, raisins, other dried fruits or lemon zest to the dough to make different variations of the cookies.
