Skyr pancakes

Makes 10 pancakes
Ingredients:
  • 2 dl whole spelt flour or whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla sugar
  • 1 tbsp granulated sugar
  • 1 egg
  • 1/2 dl vegetable oil
  • 1 dl skyr
  • 1 1/2 dl milk
  • butter or oil for cooking
Instructions:
  1. In a medium bowl, mix together the flour, baking powder, baking soda, vanilla sugar  and salt.
  2. In a separate large mixing bowl, beat the sugar, egg and  oil.
  3. Add the wet ingredients  to the flour mixture and mix until just combined. Stir in the Skyr and milk.
  4. Heat a large skillet or griddle over medium heat, and add a small amount of butter or oil.
  5. Use a ladle or a spoon to pour the batter onto the skillet or griddle. Cook until bubbles form on the surface of the pancakes and the edges start to look set, then flip and cook for an additional 1-2 minutes.
  6. Repeat the process with the remaining batter.
  7. Serve the pancakes warm, topped with syrup, berries, or any other desired toppings.

Note: You can add nuts, chocolate chips, or dried fruit to the batter to make different variations of the pancakes.
